The Best Blueberry Muffins

We love this muffin recipe, you can make it with just about any fruit and it still turns out great. We use whole wheat flour for our muffins but if you use regular white you will have lighter muffins.

1/2 cup butter, soft

3/4 cup sugar

1 egg

2 cups flour

2 tsp baking powder

1/2 tsp salt

1/2 cup milk

1/2 tsp vanilla

1 1/2 cup blueberries or other fruit

Sprinkle a mixture of 3 tsp sugar and 1/2 tsp cinnamon for the topping

Cream butter and sugar, add egg. Mix well. Sift flour, baking powder and salt in a small bow. Add flour mixture and milk to butter mixture. Add in vanilla. Gently stir in blueberries.

Bake at 400 degrees for 20-25 minutes.
